Kuih Labu Manis

Ingredients:

  • 250 g Erawan / Gajah Brand Rice Flour
  • 500 g Pumpkin
  • 100 g Star Brand Wheat Starch
  • 1000 ml Water
  • 3 pieces Small Garlic
  • 3 teaspoons Oil

Seasonings

  • 1 ½ tablespoons Salt
  • 1 teaspoon Pepper
  • ½ teaspoon Monosodium glutamate (MSG)
  • 1 ½ tablespoons Sugar

Garnishing

  • 150 g Dried Prawns (ground)
  • 1 Red Chili (sliced into pieces)
  • 75 g Fried Sliced Onions.
  • 1 stalk Spring Onion (in small pieces)
  • 10 teaspoons Oil

Steps:

  • Mix Erawan / Gajah Brand Rice Flour, Star Brand Wheat Starch and water. Strain and stir well.
  • Divide pumpkin into 2 equal portions. Cut one portion into cubes.
  • Steam remaining portion of pumpkin until softened. Smash softened pumpkin and mix well with flour batter.
  • Fry sliced onions with 10 tablespoons of oil until golden brown. Remove fried onions. Fry ground dried prawns with some sugar (for garnishing).
  • Fry garlic with oil. Add in pumpkin cubes and seasonings. Pour in flour batter. Stir continuously under medium heat until batter thickens.
  • Pour thickened batter into a well-greased 10" square tin. Flatten the surface. 
  • Steam for 30 minutes. Immediately garnish with dried prawns, spring onions and chillies after cooked.
  • Let cake cool completely.
