Bowl Huat Kuih

Ingredients:

  • 450 g Erawan Brand Rice Flour (or Cap Gajah Blended Rice Flour)
  • 550 ml Water
  • 250 ml Sugar
  • 320 ml Toddy
  • 1 teaspoon ENO Salt
  • ½ teaspoon Lye Water
  • Colouring (optional)

Steps:

  • Mix 150g flour with 240ml water. Cook over medium heat until fairly thick.
  • Add 300g flour to the thickened batter. Stir well.
  • Add toddy and 310ml water. Strain batter.
  • Place batter under sun for 4 hours.
  • Add sugar, Lye water and Eno salt into the batter. Stir well.
  • Brush moulds with oil.
  • Fill batter into mould until almost full.
  • For colouring, prepare 9 tablespoons of batter. Drop red colouring onto batter in the first 3 tablespoons, followed by green colouring onto the next 3 tablespoons, and lastly yellow colouring onto the remaining 3 tablespoons of batter.
  • Drop little amount of coloured batter onto each mould.
  • Steam for 15 mins.
  • Let it cool. Serve with grated coconut.
